AOP
AOP does not only mean Appelation d’Origine Protégée for quality wines and agricultural products (PDO or DOP in other languages). It also refers to AntiOxidant Potential. This measurement is one example of analytical method for the assessment of oxidative status. Recent results have shown that when there is accumulation of copper in the liver of dairy cows, AOP is significantly increased which indicates elevated hepatic oxidative stress.
Copper toxicity leads to liver damage and jaundice, so that rather than being the normal dark brown the liver becomes pale tan to bronze in colour.
